Brown Rice Pasta


Healthy variation of pasta made from organic brown rice, tossed with fresh veggies and cilantro chilly sauce.

Serves: 4

Ingredients:
  • Organic Brown Rice Penne Pasta - 1 packet
  • Alfredo sauce - 1 cup
  • Cilantro - 2 cups
  • Green chilly - 1 
  • Jalapeno -  2
  • Onion - 1
  • Tomato - 1 
  • Capsicum - 1
  • Garlic - 1 bulb
  • Sliced Black Olives - 1 cup
  • Dry basil - 1 tsp
  • Italian seasoning - 1 tsp
  • Black pepper - 2 tbsp
  • Olive oil - 3 tbsp
  • Shredded Parmesan - handful (optional)
  • Salt
Method:

Boil water, add pasta with olive oil, salt and cook as per packet instructions.
Strain pasta, rinse in cold water, drizzle olive oil and fresh ground pepper.
Grind cilantro and green chilly to fine paste. Heat pan, add olive oil, finely
chopped garlic, de-seeded chopped jalapeno, onion, tomato, ground
cilantro paste in order mentioned and cook till raw smell subsides. Now add
capsicum, olives, alfredo sauce and cook in low flame for 5 mins. Toss pasta
and sauce together with parmesan cheese and serve.

  1. i have tried organic wheat pasta...and the taste was ....not what i expected....really did not relish it. Wld like to try the brown rice organic pasta...what brand did u use?

  2. We had same experience with wheat pasta and tried brown rice pasta, which turned out to be good. I got 'Organic Brown Rice Penne Pasta' from Trader Joe's.
