Asparagus Soup, fresh and healthy "Cream of Asparagus Soup " with no cream.
Serves: 2
Ingredients:
Asparagus - 12
White onion - 1/2
Pepper powder - 1 tsp
Salt
Butter - 2 tsp
Milk - 1 tbsp
Vegetable broth:
Celery - 1 stalk
Carrot - 1
Beans - 10
Method:
- Snap and discard bottom hard portion of Asparagus
- Cut tip portion of Asparagus, fry in butter and retain for garnishing the soup
- Chop onion and remaining green part of asparagus finely
- Melt butter, fry onion for 2 mins in medium heat, then add chopped asparagus and fry for 5 more mins by stirring constantly
- For the vegetable broth , boil 4 cups of water with finely chopped celery, carrot and beans (can be substituted with 2 cups of any store bought broth)
- Add fried onion and asparagus to broth, simmer and cook for 15 mins.
- Allow soup to cool, filter and remove the veggies and blend with little broth to smooth paste
- Add blended paste with broth, milk and simmer for 5 mins
- Add pepper powder and salt to taste
- Garnish with fried Asparagus tip and serve
