Carrot Soup



Carrot Soup, healthy, delicious, creamy (no cream) and comforting winter treat.

Serves: 4

Ingredients:
  • Carrots - 5
  • Onion (Yellow) - 1/2
  • Ginger - 1 inch piece
  • Garlic - 2 cloves
  • Cilantro stem - handful
  • Pepper Corns - 1 tbsp
  • Butter - 1 tbsp
  • Milk - 1 cup
  • Saffron strands - few
  • Salt - to taste
Method:
  1. Boil 4 cups of water with chopped carrots, onion, ginger and garlic
  2. Switch off when the veggies are cooked and let it cool
  3. Now filter and remove the veggies and retain the broth 
  4. Blend veggies with cilantro steam to a smooth paste and set aside
  5. Add saffron to warm milk and set aside
  6. Heat pan, add butter and fry crushed pepper corns 
  7. Add blended veggies with broth and simmer for 5 mins
  8. Now add milk with saffron dissolved to soup
  9. Simmer for couple of mins and serve hot
