Carrot Soup, healthy, delicious, creamy (no cream) and comforting winter treat.
Serves: 4
Ingredients:
- Carrots - 5
- Onion (Yellow) - 1/2
- Ginger - 1 inch piece
- Garlic - 2 cloves
- Cilantro stem - handful
- Pepper Corns - 1 tbsp
- Butter - 1 tbsp
- Milk - 1 cup
- Saffron strands - few
- Salt - to taste
- Boil 4 cups of water with chopped carrots, onion, ginger and garlic
- Switch off when the veggies are cooked and let it cool
- Now filter and remove the veggies and retain the broth
- Blend veggies with cilantro steam to a smooth paste and set aside
- Add saffron to warm milk and set aside
- Heat pan, add butter and fry crushed pepper corns
- Add blended veggies with broth and simmer for 5 mins
- Now add milk with saffron dissolved to soup
- Simmer for couple of mins and serve hot
