Ingredients:
- Spinach (Baby Spinach) - 2 cups
- Tofu (Organic Sprouted Tofu) - 12 cubes (1 inch size)
- Sprouted bean (Green Lentil or Moong dal) - 1/4 cup
- Broth (Vegetable/Chicken) - 3 cups
- Pepper - to taste
- Salt - to taste
Method:
- Heat pan, add broth and boil for 10 mins
- Add cubed tofu, spinach and sprouted bean
- Cover and cook for 5 mins
- Season with salt and pepper to taste
- Serve hot and enjoy

Arrrggghhh! We just got home from the grocery and our pantry has all the ingredients to make this hearty soup except for the tofu! I think this means we're going back to the grocery to purchase some tofu. Not that we're complaining since we know it's gonna be worth it :)
