Spinach Tofu Soup

Spinach Tofu Soup, healthy soup with sprouts ready in 15 mins

Serves:2

Ingredients:
  • Spinach (Baby Spinach) - 2 cups
  • Tofu (Organic Sprouted Tofu) - 12 cubes (1 inch size)
  • Sprouted bean (Green Lentil or Moong dal) - 1/4 cup
  • Broth (Vegetable/Chicken) - 3 cups
  • Pepper - to taste
  • Salt - to taste

Method:
  1. Heat pan, add broth and boil for 10 mins
  2. Add cubed tofu, spinach and sprouted bean
  3. Cover and cook for 5 mins
  4. Season with salt and pepper to taste
  5. Serve hot and enjoy

  2. Arrrggghhh! We just got home from the grocery and our pantry has all the ingredients to make this hearty soup except for the tofu! I think this means we're going back to the grocery to purchase some tofu. Not that we're complaining since we know it's gonna be worth it :)
