Carrot Halwa - Happy New Year 2012


Wishing you all a very Happy and Prosperous New Year 2012. 
Carrot Halwa / Gajar Ka Halwa , a sweet treat for New Year.


Serves: 4

Ingredients:
  • Carrot - 4
  • Milk - 1 cup
  • Condensed milk [Fat Free] - 3/4 cup
  • Melted Butter - 2 tbsp
  • Cardamom - 2
  • Raisins - 1 tbsp
  • Cashew nuts - 10
Method:
  1. Heat butter in a non-stick pressure cooker/ pan
  2. Fry raisins, cashews in butter and set aside
  3. Now fry shredded carrots in same butter till raw smell subsides
  4. Add milk and pressure cook for 1 whistle or cover and cook till milk evaporates
  5. Open pan add condensed milk, cook for 10 min. in medium high flame by stirring constantly till carrot absorbs milk
  6. Now add powdered cardamom and mix well
  7. Garnish with fried nuts and raisins
  8. Serve it as hot dessert (can also be served with a scoop of ice-cream) or refrigerate and serve cold

  2. I had this for the first time on Christmas eve at a local restaurant. It was the best part of the meal. I could not believe it was a carrot pudding and I LOVED it. I am looking forward to making it myself. Thank you for posting the recipe!
