Madras Filter Coffee

South Indian 'Madras Filter Coffee' aka 'Degree Coffee' is made from first decoction. Here is the Coffee made authentic way, served hot and frothy in traditional tumbler and dabara. Enjoy the aroma and strong flavor of Madras filter coffee. 


Makes: 2 cups 
Serves:2

Ingredients:
  • Filter Coffee powder (80% coffee, 20% chicory) - 3 tbsp
  • Water -3/4 cup
  • Milk - 1-1/2 cup
  • Sugar - 2 tsp
Method:
  1. Indian coffee filter has two containers, upper container with perforated bottom and lower container to hold the decoction
  2. Add coffee powder to upper container
  3. Boil water and pour it slowly on top of coffee powder in upper container till its full
  4. Allow decoction to drip in lower conatiner which will take 30 to 45 mins and allow it to cool down completely
  5. Boil milk in stove top and do not microwave for better taste
  6. Mix 1/3 cup of dripped coffee/decoction with 2/3 cup of boiled milk and sugar as desired. 
  7. Pour coffee back and forth between the dabarah and the tumbler in arc-like motion to make it frothy
  8. Serve hot and enjoy
Tip:
  •  Add pinch of sugar to decoction and refrigerate for later user
  •  Preparing decoction is a technique which is perfected by practice
