Peanut Cilantro Chutney has vibrant color and flavor, can be served with bread, roti or dosa
Serves: 3
Ingredients:
- Roasted Peanut - 1/4 cup
- Cilantro - 1 cup
- Green Chilly - 2
- Shallots/ Pearl onion - 5
- Tamarind - small piece (Blueberry size)
- Jaggery - pinch
- Cumin seeds - 1/4 tsp
- Ginger - 1/2 inch
- Garlic - 1 clove
- Hing/Asafoetida - pinch
- Salt
Heat pan, add oil, cumin seeds, hing, ginger, garlic, chopped shallots
and fry till raw smell subsides. Add roasted peanuts, cilantro, jaggery,
tamarind, salt and switch off. Allow to cool and blend/grind with
little water.
