Ingredients:
- Panner (Grated) - 1 cup
- Butter - 1 tbsp
- Oil - 1 tbsp
- Cumin seeds - 1/2 tsp
- Bay leaf - 1
- Onion - 1
- Capsicum - 1
- Ginger Garlic paste - 1 tsp
- Tomato puree - 1 cup
- Turmeric powder - 1/4 tsp
- Red chilly powder - 1/2 tsp
- Chicken masala - 1 tsp
- Chilly chicken masala - 1 tsp
- Evaporated milk - 1/2 cup
- Salt - to taste
- Cilantro - handful
Ground to coarse powder:
- Cinnamon - 1 inch piece
- Coriander seeds - 1 tsp
- Cashew - 1 tbsp
- Milk - 1 tbsp
- Boil water and add grated panner in boiling water for 2 mins to soften panner and set it aside
- Heat pan, add oil and butter, fry cumin seeds and bay leaf
- Add ground coriander-cinnamon powder and fry till you get nice aroma, be careful not to burn
- Saute finely chopped onion, capsicum and fry till onion is translucent
- Now add ginger garlic paste and fry till raw smell subsides
- Add tomato puree, turmeric powder, red chilly powder, chilly chicken masala, chicken masala and cook till oil seperates
- Add ground cashew paste, evaporated milk and cook till it comes to a boil
- Stir in grated panner and chopped cilantro
- Serve hot with Naan or roti
