Ingredients:
- Organic Fusilli pasta - 1 packet
- Cilantro - 2 cups
- Green chilly -2
- Jalapeno - 1
- Garlic - 3 cloves
- Ginger - 1/2 inch piece
- Peppercorn - 1 tbsp
- Almonds - 8
- Sliced Black Olives - 1 cup
- Extra firm Tofu - 1 packet
- Dry basil - 1 tsp
- Black pepper powder - 1 tbsp
- Olive oil - 5 tbsp
- Salt
- Shredded Parmesan - handful
- Boil water, add pasta with olive oil, salt and cook as per packet instructions
- Strain pasta, rinse in cold water, drizzle olive oil and fresh ground pepper
- Grind cilantro, green chilly, deseeded jalapeno, ginger, garlic, peppercorns, almonds to fine paste by adding 3 tbsp olive oil
- Cut tofu into cubes, shallow fry till its crispy on all sides , add salt, pepper powder and keep aside
- In low flame, toss pasta, ground pesto sauce, fried tofu and sliced olives
- Add shredded Parmesan cheese and serve hot
