Potato Bajji / Aloo Bhaji/ Indian-style Potato wedges. Simply irresistible and popular South-Indian street food that is incredibly easy to prepare at home.
Serves:4
Ingredients :
- Potato (big) - 1
- Oil - for deep frying
- Besan / ChickPea flour - 1 cup
- Rice flour - 1/2 cup
- Maida / All purpose flour - 1/4 cup
- Red chilly powder - 1 tsp
- Coriander powder - 1/2 tsp
- Turmeric powder - 1/4 tsp
- Asafotieda - 1/4 tsp
- Salt - to taste
- Ginger paste - 1/2 tsp
- Oil - 1 tsp
- Food color - pinch (optional)
- Water - 1 cup
- Mix all ingredients listed under "Batter" and keep it aside
- Cut potato into thin slices
- Heat oil in a pan
- Dip sliced potato in batter
- Fry till its golden brown on both sides
- Serve hot with Tomato chilly ketchup
A cup of hot chai and this bajji is what I crave for now...super tempting.
