Sakkarai Pongal is a sweet pongal made from rice, dhal and jaggery , topped with fried cashews and raisins.
Serves:4
Ingredients:
- Rice - 1/2 cup
- Moong dhal - 2 tbsp
- Channa dhal - 1 tbsp
- Gratted Jaggery - 1/2 cup
- Sugar - 1/4 cup
- Cashew -handful
- Raisin - handful
- Cardamom - 2
- Ghee - 1/4 cup
- Milk - 1/2 cup
- Wash and rinse rice and dhal, mix them together
- Pressure cook it with 2 cups water and 1/2 cup milk for 3 whistles
- Open it when pressure is released and mash with a wooden ladle
- Heat ghee and fry cashew, raisin, powdered cardamom and keep aside
- Heat pan in medium heat, add mashed rice dhal mix, grated jaggery and sugar till jaggery and sugar melts
- Add fried cashew and raisin
- Serve hot and enjoy
I used to work in India and this sounds so much like a dish there I fell in love with! I'm hoping I can find these ingredients you refer to so I can try it. I'm off to google what some of them are!
