Minestrone Soup

Minestrone soup is an Italian soup, made with pasta, bean, fresh veggie and marinara sauce,  served with garlic bread. Indian touch of minestrone soup served with tomato basil bread.

Serves: 6

Ingredients:
  • White Onion - 1/2
  • Garlic - 4 cloves
  • Carrot - 2
  • Spring onion - 1/4 cup
  • Celery - 3 stalk 
  • Mini Shell pasta - 1/2 cup
  • Marinara sauce - 1 cup
  • Pasta seasoning - 1/2 tsp
  • Dry Basil - 1/2 tsp
  • Garbanzo beans - 1 can or 1 cup soaked/cooked
  • Kidney beans - 1 can or 1 cup soaked/cooked
  • Grated Parmesan Cheese 
  • Salt
Method:
  1. Finely chopped garlic, onion, carrot, spring onion and celery
  2. In a pressure pan add water with chopped veggie and allow it to boil for 30 mins
  3. Wash garbanzo beans,  kidney beans and add it to boiling soup 
  4. Add marinara sauce, pasta seasoning, dry basil and salt to taste
  5. Close pan and cook for one whistle
  6. Open pan when pressure is released, add pasta and cook till it's soft
  7. Serve hot with grated cheese and any toasted bread of your choice
