Masal vada / Masala vadai / Split Peas Fritters is crisp lentil dumpling a savoury South Indian snack.

Ingredients:
- Split peas [Yellow] - 3/4
- Fennel seeds - 1 tsp
- Dry Red chilly - 3
- Garlic cloves - 2
- Onion - 1
- Asafotieda - 1 tsp
- Salt
- Oil
Method:
- Soak split peas in water for 3 hours
- Grind 1/2 cup soaked peas, fennel seeds, garlic and red chilly to coarse paste without adding water
- Mix remaining 1/4 cup soaked peas , chopped onions, asafoetida, curry leaves, salt to taste to batter
- Heat oil in a kadai or pan
- Apply oil in hands or use a greased flat plate
- Make small lime sized ball and flatten it
- Deep fry in oil, till crispy and golden brown on all sides
- Server hot and enjoy
Variation: Split peas [Pattani Paruppu] can also be substituted with Channa Dal
I used to have something similar to this on my menus 30 years ago and if I ever took it off the menu people ordered it anyway, it was so popular! An absolutely gorgeous recipe.
