Masala Vadai

Masal vada / Masala vadai / Split Peas Fritters is crisp lentil dumpling a savoury South Indian snack.

Makes : 14  
Serves: 3

Ingredients:
  • Split peas [Yellow] - 3/4
  • Fennel seeds - 1 tsp
  • Dry Red chilly - 3
  • Garlic cloves - 2
  • Onion - 1
  • Asafotieda - 1 tsp
  • Salt 
  • Oil
Method:
  1. Soak split peas in water for 3 hours
  2. Grind 1/2 cup soaked peas, fennel seeds, garlic and red chilly to coarse paste without adding water
  3. Mix remaining 1/4 cup soaked peas , chopped onions, asafoetida, curry leaves, salt to taste to batter
  4. Heat oil in a kadai or pan
  5. Apply oil in hands or use a greased flat plate
  6. Make small lime sized ball and flatten it
  7. Deep fry in oil, till crispy and golden brown on all sides
  8. Server hot and enjoy
 Variation: Split peas [Pattani Paruppu] can also be substituted with Channa Dal

  1. I used to have something similar to this on my menus 30 years ago and if I ever took it off the menu people ordered it anyway, it was so popular! An absolutely gorgeous recipe.
