Bhindi Masala


Bhindi Masala / Okra Masala / Ladies Finger Masala, fried okra cooked with cashew coconut curry paste. 

Serves: 3

Ingredients:
  • Ladies Finger / Okra - 30 
  • Onion - 1
  • Tomato - 5
  • Mustard seeds - 1/4 tsp
  • Urad dal - 1 tsp
  • Curry leaves - 1 strand
  • Sambar powder - 1 tsp
  • Red chilly powder - 1 tsp
  • Salt - to tast
  • Oil - 2 tbsp
Grind to Paste:
  • Coconut - 1-1/2 tbsp
  • Cashew nut - 6
Method:
  1. Chop okra, shallow fry it in a pan till its crispy and set aside. 
  2. Grind cashew nut and coconut to fine paste by adding little water
  3. Add oil in a pan,  fry mustard seeds, urad dal, curry leaves, chopped onion and fry till onion is cooked
  4. Now add finely chopped tomato and cook for few mins
  5. Add sambar powder, chilli powder and cook till raw smell subsides
  6. Now add ground paste, salt to taste and bring to a boil
  7. Add fried okra and serve with rice / roti
