Bhindi Masala / Okra Masala / Ladies Finger Masala, fried okra cooked with cashew coconut curry paste.
Serves: 3
Ingredients:
- Ladies Finger / Okra - 30
- Onion - 1
- Tomato - 5
- Mustard seeds - 1/4 tsp
- Urad dal - 1 tsp
- Curry leaves - 1 strand
- Sambar powder - 1 tsp
- Red chilly powder - 1 tsp
- Salt - to tast
- Oil - 2 tbsp
- Coconut - 1-1/2 tbsp
- Cashew nut - 6
- Chop okra, shallow fry it in a pan till its crispy and set aside.
- Grind cashew nut and coconut to fine paste by adding little water
- Add oil in a pan, fry mustard seeds, urad dal, curry leaves, chopped onion and fry till onion is cooked
- Now add finely chopped tomato and cook for few mins
- Add sambar powder, chilli powder and cook till raw smell subsides
- Now add ground paste, salt to taste and bring to a boil
- Add fried okra and serve with rice / roti
