Akbari Paneer

Akbari Paneer, grated paneer cooked in creamy sauce served with Naan.

Serves: 4

Ingredients:
  • Panner (Grated) - 1 cup
  • Butter - 1 tbsp
  • Oil - 1 tbsp
  • Cumin seeds - 1/2 tsp
  • Bay leaf - 1
  • Onion - 1
  • Capsicum - 1
  • Ginger Garlic paste - 1 tsp
  • Tomato puree - 1 cup
  • Turmeric powder - 1/4 tsp
  • Red chilly powder - 1/2 tsp
  • Chicken masala - 1 tsp
  • Chilly chicken masala - 1 tsp
  • Evaporated milk - 1/2 cup
  • Salt - to taste
  • Cilantro - handful

Ground to coarse powder:
  • Cinnamon - 1 inch piece
  • Coriander seeds - 1 tsp
Ground to paste:
  • Cashew - 1 tbsp
  • Milk - 1 tbsp
Method:
  1. Boil water and add grated panner in boiling water for 2 mins to soften panner and set it aside
  2. Heat pan, add oil and butter, fry cumin seeds and bay leaf
  3. Add ground coriander-cinnamon powder and fry till you get nice aroma, be careful not to burn
  4. Saute finely chopped onion, capsicum and fry till onion is translucent
  5. Now add ginger garlic paste and fry till raw smell subsides
  6. Add tomato puree, turmeric powder, red chilly powder, chilly chicken masala, chicken masala and cook till oil seperates
  7. Add ground cashew paste, evaporated milk and cook till it comes to a boil
  8. Stir in grated panner and chopped cilantro
  9. Serve hot with Naan or roti
