Carrot Kheer

Carrot Kheer, cool and refreshing drink.


  • Carrot - 2 [Medium size] 
  • Almond - 1/4 cup
  • Cashew - 1/4 cup
  • Sugar - 1/2 cup
  • Milk - 4 cup
  • Saffron - few

  1. Soak almond and cashew for an hr in a seperate bowl and remove almond skin
  2. Grind almond and cashew to fine paste by adding little water
  3. Peel, cut, boil carrots and puree.
  4. Soak saffron in warm milk and stir for color and flavor.
  5. Mix almond and carrot paste with sugar, saffron, 1 cup milk and microwave for 7 mins.
  6. Stir every one min while cooking in microwave.
  7. Allow it to cool and refrigerate the mix for later use.
  8. While serving mix 1/4 cup of carrot paste with with 3/4 cup milk and serve (1:3 ratio)
