Pav Bhaji

Pav Bhaji, Pav means bread and Bhaji means veggie masala, popular street food in India served as fast food.

Serves: 4

Ingredients:
  • Pav - 8 slices
  • Onion - 1
  • Tomato - 2
  • Ginger garlic paste - 1 tsp
  • Butter - 3 tbsp
  • Potato - 1
  • Carrot - 1
  • Capsicum - 1
  • Green chilly - 2
  • Green peas - 1/4 cup
  • Turmeric powder - 1/2 tsp
  • Cumin powder - 1/2 tsp
  • Red chilly powder - 1/2 tsp
  • Coriander powder - 1/2 tsp
  • Asafotieda - 1/2 tsp
  • Amchoor powder - 1/2 tsp
  • Chaat masala/pav bhaji masala - 1/2 tsp
  • Food color - pinch (optional)
  • Cilantro - handful
  • Lime - 1
Method:
  1. Pressure cook potato, carrot, capsicum, green chilly with turmeric powder and water for 2 whistle
  2. When pressure is released, smash cooked veggies and keep aside
  3. Heat pan, add 1 tbsp butter, chopped onion, ginger garlic paste and fry till raw smell subsides
  4. Add chopped tomato, cumin powder, coriander powder, red chilly powder and cook till oil separates
  5. Add cooked veggies, boiled peas, amchoor powder, chaat masala, asafotieda, food color, salt to taste and cook for 5 mins
  6. Switch off, add 1 tbsp butter, chopped cilantro, squeeze lime and mix well
  7. Roast pav (available in Indian grocery/ bakery) with 1 tbsp butter till its golden brown on all sides
  8. Serve Pav with Bhaji and chopped onions
