Asparagus Soup

Asparagus Soup, fresh and healthy  "Cream of Asparagus Soup " with no cream.

Serves: 2


Asparagus - 12
White onion - 1/2
Pepper powder - 1 tsp
Butter - 2 tsp
Milk - 1 tbsp

Vegetable broth:

Celery - 1 stalk
Carrot - 1
Beans - 10

  1. Snap and discard bottom hard portion of Asparagus
  2. Cut tip portion of Asparagus, fry in butter and retain for garnishing the soup
  3. Chop onion and remaining green part of asparagus finely
  4. Melt butter, fry onion for 2 mins in medium heat, then add chopped asparagus and fry for 5 more mins by stirring constantly
  5. For the vegetable broth , boil 4 cups of water with finely chopped celery, carrot and beans (can be substituted with 2 cups of any store bought broth)
  6. Add fried onion and asparagus to broth, simmer and cook for 15 mins.
  7. Allow soup to cool,  filter and remove the veggies and blend with little broth to smooth paste
  8. Add blended paste with broth, milk and simmer for 5 mins
  9. Add pepper powder and salt to taste
  10. Garnish with fried Asparagus tip and serve
